There are a lot of us, and there will be one more from a cousin in a couple months! Can’t Wait to kiss some sweet new baby cheeks once again!!!And that makes me think . . . I need to kiss my great-niece Kaya’s sweet baby cheeks real real soon!!!

Sunday & Reflection

Friday night I went to Jami’s house and had some girly time with Wendy D. and James. Nothing like a couple of girls just getting it all out there, and being creative. I made three paintings there, friday night, and one was a collaboration with Mrs. Deason. What a joy it is to have such sweet and understanding girlfriends!
Went home friday night and Matt graciously let me sleep in. When I woke up – Colton was having a bonified stomach bug. He was so super miserable looking, I did all his Saturday chores, which he was very thankful. I had a great meal planned and some family ideas, but they all went out the window when Angie offered to take the kids for the night. Impromptu meal planning change: Matt and I went to Maggiano’s for dinner with a gift card Travis and Amanda gifted us with @ Christmas time. It was wonderful, we sat at the Piano for a while, and he played “Blue Eye’s Crying In The Rain” by Willie Nelson for us. We finally got our table and had the most delicious calamari, and Lobster, Sweet Pea, and Red Pepper fettucine! noms noms – Afterwords we went to Jami & Russell’s for just a minute, I was tired and ready for bed.

Today I have to put on that Home Cook apron again and here is my dinner plan:
Grilled Chicken & Orecchiette tossed with Spinach and Cannellini Beans
Garlic Bread
Tea
I will toss the Orecchiette dish with Parmesan cheese (or Feta or Goat Cheese) before I serve it, yumm!! The secret is to make a sauce with Basil and Chicken Broth when you cook the beans down. The pasta will absorb the liquid when you add it in. You can also use fresh spinach, but I just use the bag of frozen chopped. It’s cheaper!
Grilled Chicken & Orecchiette tossed with Spinach and Cannellini Beans
Heat your favorite skillet or cast Iron Pan.
Olive Oil and Garlic in the pan till the flavor is enhanced.
Add green onion if you wish.
Add a can of Cannellini Beans Drained.
Add a can of Chicken Broth.
Add salt and pepper, basil, oregano.
Add the spinach if you are using frozen.
If you use fresh, toss it in when you add the pasta.
Let this cook about 30 mins on medium heat.
Boil about 1 cup of Orecchiette Pasta.
Toss pasta in mixture above. If it’s too thick, don’t be afraid to add some pasta water & salt.
Let this sit while you grill your chicken.
YUM!!
Home Cook – I have arrived
Posted: February 26, 2010 Filed under: Uncategorized | Tags: healthy kids meals, Home Cook Leave a comment »The other day, I was looking in the mirror at myself, and I realized “I am a home cook.” Just about every day around 4 or 5 o’clock, I start to ponder what I am going to make for dinner. I balance the food in my mind; colors, protein, starch, beverage, & do we have desert? Have the kids had fiber or nutrition today?? If not, how to incorporate it in – If so – Breakfast for Dinner! I also gotta have kid friendly meals & How can I sneak that cabbage in that’s going bad in the fridge? Do I have the veggies for the Stir-Fry? Rice or Pasta? Maybe you can get a sense of where I am coming from . . . I have arrived – to be a wonderful and most creative Home Cook. Here I am. I have arrived!
I have even started to pull together a little business in my mind, that some day I hope to realize! Home Cook Boot Camp – A place for the mother or wife who has also realized they need some help if they want to be in control of their family’s diet.
Well, now i need to go and make lunch for my 1-year-old, Archer! More to come, recipes, and tips on how to make great healthy home cooked food for your family! You might be surprised by me & If I can keep this up, I might surprise myself!!
Learning All I Can While The Baby Naps!

I have so many ideas and musings, I need something like WordPress to get my thoughts out there!! My favorite design folks out there have been talking to me about learning WordPress and incorporating it into my Dreamweaver workflow, so here I am and hopefully I will be able to rock it out.
I have never been a writer but I love to think and ponder so hopefully I will be able to use this medium to not only give my clients a more user-friendly weblog – I will be able to get my thoughts and poor grammar & typing out as well!! Now I am going to insert a video and a photo just to show you all (and myself) I know what I am doing ;b & I will make it a PS22 song so you will smile a big huge smile before you leave here!!
Aren’t these kids just AMAZING!!! I wish my kids had a music teacher so AMAZINGly wonderful!!
